Gul Poli is prepared on the day of "Makar Sankranti", a Maharashtrian harvest festival. Maharashtrians prepare this traditional "Gul Poli", til gul wadi or ladoo to celebrate this festival. The main ingredient is jaggery & sesame seeds which keeps the body warm, provide adequate nutrition required during harsh winters. The combination of sesame seeds & jaggery is to die for.

Ingredients
For dough
- 1 cup wheat flour
- 1 cup Maida
- 1 tbsp hot oil
- Salt to taste
- warm water as required
For filling (Saran)
- 3/4 cup Jaggery
- 1 1/2 tbsp Besan
- 1 1/2 tbsp Ghee
- 2 1/2 tbsp sesame seeds
- 1 tbsp poppy seeds
- 1 teaspoon Cardamom Powder
- 2 tsp water
- Ghee or Clarified butter for serving
Method
- Mix the flours along with salt, make a well in the middle, heat oil & add it to the flour. Make a soft dough with warm water. Knead the dough well. Keep aside in a plastic wrap.
- for preparing the filing, grate the jaggery , to it add cardamon powder in a bowl, Melt the grated jaggery in 2 tsp water and turn off the flame after the jaggery has melted otherwise the jaggery will become hard after it has cooled due to over heating.
- Roast sesame seeds, poppy seeds one by one add it to the grinder and let it cool.
- Add ghee in the pan and fry the gram flour until it changes its colour to dark brown. turn off the heat and let it cool.
- Grind the sesame seeds and poppy seeds to smooth powder. Add this grated mixture to jaggery & cardamom also add the gram flour after it completely cools.
- Make balls of the filling. Make equal portions of dough. sprinkle some flour on the rolling board. Roll the dough in the size of a puri. Place the ball of the filling in the center close it by covering the edges at top so that the filling will not come out.
- Use more flour if required and roll it like a chappati Heat the griddle (tawa) roast it from both the side on medium flame. Serve with ghee.
