Chocolate Muffins with Buttercream Frosting

Sharing the recipe of chocolate Muffins with butter cream frosting. This recipe is very close to my heart since I baked it for my darling son's 2 nd birthday & tried the butter cream frosting for the second time and it was just perfect! well appreciated by all the kids and my friends too. All the kids enjoyed the little piece of the muffin and were very trilled not to share the piece of cake with anybody . Muffins may come in different flavours but chocolate muffins are everybody's hot favourite. the cocoa powder dissolved in the hot water brings out the rich flavour of the chocolate. you may change the colour of the frosting as per your requirement! I used the blue colour.
Ingredients
½ cup cocoa powder (I used Hershey's Natural unsweetened cocoa)

1½ cups wheat flour


½ cup unsalted butter, room temperature
1 cup boiling hot water
1 cup sugar
2 large eggs at room temperature
2 teaspoons baking powder
2 teaspoons vanilla essence
½ teaspoon salt
Butter-cream Frosting
2 cups icing sugar(sifted)
½ cup unsalted butter, room temperature
2 teaspoon vanilla extract
few drops of any food colours (I used blue)
Method
Preheat oven to 180 degrees C. line muffin cups with paper liners.
In a bowl stir until smooth the boiling hot water and the cocoa powder. Let cool to room temperature. 
In another bowl, whisk together the flour, baking powder, and salt.
Then with a hand mixer, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Scrape down the sides of the bowl as needed. Beat in the vanilla essence. Add the flour mixture and beat only until incorporated. Then add the cooled cocoa mixture and stir until smooth.
Fill each muffin cups about two-thirds full with batter and bake for about 20 minutes or until risen,   or a toothpick inserted into a cupcake comes out clean. Remove from oven and place on a wire rack to cool. Once the muffins have completely cooled, frost with the icing. 
(the above quantity makes 16-18 muffins depending upon the size of the muffin papers)
Either spread the frosting on the muffins with a small spatula or if piping, use a large zigzag/ star tip to make lovely swirls.
Butter-cream Frosting
In a glass bowl, with a help of a spatula mix the butter until smooth and creamy for 1 minute. Add the icing sugar and mix until it is light and fluffy (about 2 minutes). Beat in the vanilla extract. Use the hand mixer to mix the frosting properly
