GoodFood BBC magazine (March 2014) features recipes of Chitrapur Saraswats, I fell in love with the Beetroots Sukke (Spiced Beetroots), I love this root vegetable & often have it raw or cooked in salads, but I never came across any recipe which had beetroots in main course. I was salivating (literally) after reading the recipe. Hope y'll beetroot lovers try this veggie.

- Dry red chillies- 2-3
- Coriander seeds 1tsp
- urad dal 1 tsp
- fenugreek seeds- 1/4 tsp
- coconut- 2 tsp, grated
- tamarind 15 gms
- jaggary 2tsp
- ghee 1 tsp (I used oil)
- hing- a pinch
- onion 1 small (finely chopped)
- beetroots 200 gms cooked, peeled, diced
- salt to taste
- freshly chopped coriander 1tsp
- Dry roast the red chillies, coriader seeds, urad dal & fenugreek seeds. Add coconut, tamarind & jaggary & grind it roughly.
- heat the pan add oil & a pinch of hing, add the onions cook until they turn transparent,, add the ground masala, saute for a minute. the spices will release their aroma.
- Add the beetroots, add salt and serve hot. garnish with chopped coriander.
