Ingredients
1 cup all- purpose flour
1/2 cup whole wheat flour
1/2 cup oats
1/2 cup oats
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon (i used 2 tsp because i love the aroma of cinammon)
1/4 teaspoon salt
1/4 cup skim milk
1/4 cup skim milk
1/4 cup vegetable oil ( i thk u can use any oil u have)
2 egg white
1 whole egg
1 teaspoon vanilla
1 1/4 cups mashed very ripe bananas (about 3 small bananas)
1/3 cup chopped walnuts toasted
Method
Preheat oven to 180 degrees C.
combine all purpose flour,oats, whole wheat flour, sugar, baking powder, baking soda,cinnamon and salt in a large bowl.
In a smaller mixing bowl whisk together milk, egg whites, eggs, oil & vanilla.
Pour milk mixture into the dry ingredients and stir until blended.
Stir in bananas, walnuts blending until moistened.
Spoon into 1/2 inch load pan.
Sprinkle top of bread with the remaining oats.
Bake for 55 to 60 minutes or until browned and toothpick inserted in center comes out clean.( i baked it for exactly 60 mins)
Allow to stand in pan for 20 mins, then remove from pan and place on wire rack to cool
