Beetroot Sukke (Spiced Beetroots)

GoodFood BBC magazine (March 2014) features recipes of Chitrapur Saraswats, I fell in love with the Beetroots Sukke (Spiced Beetroots), I love this root vegetable & often have it raw or cooked in salads, but I never came across any recipe which had beetroots in main course. I was salivating (literally) after reading the recipe. Hope y'll beetroot lovers try this veggie.

 Ingredients
  1. Dry red chillies- 2-3
  2. Coriander seeds 1tsp
  3. urad dal 1 tsp
  4. fenugreek seeds- 1/4 tsp
  5. coconut- 2 tsp, grated
  6. tamarind 15 gms
  7. jaggary 2tsp
  8. ghee 1 tsp (I used oil)
  9. hing- a pinch
  10. onion 1 small (finely chopped)
  11. beetroots 200 gms cooked, peeled, diced
  12. salt to taste
  13. freshly chopped coriander 1tsp
Method
  1. Dry roast the red chillies, coriader seeds, urad dal & fenugreek seeds. Add coconut, tamarind & jaggary & grind it roughly.
  2. heat the pan add oil & a pinch of hing, add the onions cook until they turn transparent,, add the ground masala, saute for a minute. the spices will release their aroma.
  3. Add the beetroots, add salt and serve hot. garnish with chopped coriander.
