Celebrating Mother's Day

Whenever I think of basket chaat it takes me back to my college days when we used to enjoy the it in "manmeet" on FC rd in Pune. Thought they used to make baskets of potato, I tried making them with both wheat flour & potato.Making the basket can be little tricky but once you get a hang of it nothing like it!Just be very careful while removing the basket from the steel bowl.
Wheat Basket Chaat
For the  wheat flour baskets
½ cup wheat flour
½ cup rava
½ tsp ajwain
salt as per taste
Oil for frying
Mix wheat flour, rava,salt, hot oil and knead well.The dough should be not be very soft.
Roll out into thin circle.Place the circle on a steel bowl which is greased with some oil .Make the dough fit on the molds outer side.
Fry the dough along with the bowl in hot oil. Remove the mold gently after the dough is set in oil. Fry both sides of the basket on low flame till golden brown.Drain on Kitchen towel.
For Filling
Mix chopped onion, boiled potato, curd, cumin powder, red chili powder, chaat masala & salt
For Tamarind-Jaggery-date chutney

Dissolve ½ cup tamarind & 10 dates (remove seeds) in hot water and leave for 2 hrs, boil this mixture and let it cool, then grind it in a blender and strain the water to remove the tamarind pulp. Add jaggery as required, red chili powder, cumin powder, coriander powder and salt. After the chutney starts boiling remove from flame and use when cooled.
Assemble chaat
keep the basket into a bowl, add the filling,  tamarind chutney, and garnish with coriander and chaat masala.

Potato basket
2 cups of very finely graded potato
Oil for deep frying
grease the steel bowl with oil and place the grated potato on the bowl, be very careful while demolding the potato basket from the bowl, you can make many baskets once you get the trick.

Assemble the potato basket chaat
Place the basket in serving plate.Arrange the potato basket in a serving plate.
Fill basket with green sprouts, chopped veggies like onion, boiled potato, tomato , corm kernels,  chaat masala, cumin powder salt and tamarind chutney,garnish with coriander and boondi

Dig in!

1/4 cup oats
1 cup yogurt
1 cup strawberries (fresh or frozen)
1/2 ripe banana
2 tsp sugar
1 cup milk
Mix the oats & yogurt and let sit in the fridge over night.
Puree everything in a food processor.
