A salad or a starter packed with protein and healthy option for a light snack. It's crunchy, sour, spicy & a tiny hint of sweetness from the corn. It surely won't disappoint you!
Ingredients
Kidney beans, corn & chickpea salad |
- 5 tbsp rajma (Kidney beans)
- 5 tbsp chole (Chickpeas)
- 5 tbsp corn (cooked)
- 1 large onion
- 1 large capsicum
- 2 tbsp lime juice
- 3 green chillies
- 3 tbsp coriander
- salt as per taste
- add 1 tsp salt & soak the rajma & chole overnight, pressure cook for 2 whistles only. remove and keep aside to cool.
- In a large mixing bowl add the cooked rajma, chola & cooked corn kernels. Add very finely chopped onions, capsicum, lime juice, chilli paste made from 3 chillies, salt as per taste and coriander.
- prepare the starter in the afternoon if you want to serve it for dinner for all the flavors to combine with the beans and vegetables.
This reminds of the salads I would eat when I used to go to Oslo because it was the only dish I could relate to.
